How do I replace a cv joint? Do I need to replace both cv joints at the same time?

It is best to replace the entire axle assembly, you have to remove the caliper, bracket, outer tie rod, lower ball joint.

Pull knuckle out to clear axle, pop axle out from trans, replace axle seal, installation is reverse of removal.

New CV axles cost about $70 from most autoparts stores.
