Temperature gauge disappears during driving?

2017 Pacifica vehicle temperature gauge disappears during driving and check engine light on. had it diagnose and advice to change the coolant sensor. Sensor was replaced and temperature gauge still disappears during driving phase. It is not overheating and no sign of coolant leaks. coolant dispenser still shows no lost of coolant.
