I installed an independent temperature gauge and it was reading 90 then it went up to 110 degrees. is that normal or do I need to change my fans. note: the A/C was off.

Those numbers don't look bad. The 110 is about a normal fan cut on temperature these days. Did the temperature come down once the fans came on and they cycled on and off?

Most modern engines tend to run hotter than what many people would think is normal. It isn't uncommon to see them run at a normal temperature of 105-110 with fans set to come on at those temperatures. I don't find a listed specification for the fan temperature in the information I have on that van. A call to a dealer may get you the numbers for it as built, however I wouldn't worry unless it starts showing as hot.
