Wile driving down interstate I'm smelling a sweet smell that is strong. Could this be a head gasket?

Much more likely the heater core is leaking. If you have air conditioning, check under the hood, passenger side of the firewall, for a 4" long rubber hose with a 90 degree bend hanging down. If coolant is dripping from that hose, replace the heater core.
