2004 Suzuki Forenza Engine Running Hot and Losing Water

I've had the radiator replaced and the head gasket. The mechanic says the heads aren't cracked or warped but the car is losing water. There are not visible leaks from any hoses or containers. The engine runs hot after driving the car for less than five minutes, it hesitates as if I purchased some bad gas and when stopped the car idles up and down. The mechanic is now saying a new thermostat will correct the problem. What should I do?

The mechanic is now saying a new thermostat will correct the problem. What should I do?

Have him replace it-if it continues checked the water pump and also have him bleed the cooling system
