2001 Subaru Outback temperature gauge

While driving about 30 miles my temperature gauge will spike to hot for a minute or two then go back to normal.But the motor does not seem to be overheating.

It may be a faulty engine coolant temp sensor, or the thermostat is having a hard time opening. Have you checked the coolant level?
