Yesterday my grandmother told me that her car wouldn't start and I went to jump off the battery and the car would start when I jumped it off, but whenever I took off the cables for my truck it would shut off once and then whenever I had it running I took off the positive power from the battery and the car stalled what might be the issue.

Please do not remove the positive cable from the battery while running, you can blow out computer modules. It sounds like the battery or alternator is bad. I would jump start the car again and then use a voltage meter at the battery to see if the alternator is charging. This guide can help, if the battery is charging that replace it with a new one and the problem should be fixed, here is a guide to help you:
