Hi,
First, does this happen if you are stopped with the transmission in neutral or park? If it does, the first thing I would check for is an engine vacuum leak.

Also, if the check engine light is staying while the engine is running, I would have the computer scanned to see what diagnostic trouble codes are stored. Most parts stores will do it free of charge.
Keep in mind, there are a few different things that can cause this to happen. For example, a faulty idle speed control valve, fuel pressure issues, and so on. If you have the computer scanned, it will help point us in the right direction.
