1999 Saturn SC2 FLASHING LOW COOLANT LIGHT

A couple of months ago I had a used engine put in. Last week my low coolant light started flashing. After a couple of minutes it stops. A couple of minutes later it starts flashing again. Everyday the timing of flashing and not flashing is about the same. Coolant level seems fine and my temperature gauge doesn't go any higher than normal. What could the problem be?
