Will I have any problems with my daily driver if I run it on open aftermarket ceramic coated long tube headers all the time?

Or if so can I run two small straight pipes to exit behind each door with out problems?

Yes, you need to run the exhaust to the rear of the truck so you don't get fixated by the exhaust which can cause death.
