Rodent damage - Check Engine light

Rodent damage and repair of wiring in recent past. Now Check Engine light indicates a problem in the coolant system. Assuming rodent damage is most likely, how would you proceed?
For example is it more efficient to replace whole thermostat system or to determine if sensor alone is problem or if defective wiring can be detected and taped?
