Rich fuel, hard shifting little gas pedal movement

OK so I traded for this car to have a project. It runs rich and I was wondering what to look at to figure out the issue. Not sure how much the exhaust system would effect that but the previous owner removed the catalytic converter. I am going to run a whole new exhaust because of this. Next issue is that hard shifting and low acceration. Acceration I can see as the fuel being the issue. What should I attempt to do to smooth out the tranny? Lastly the gas pedal is basically to the floor all the time. It moves maybe an inch when you push it down. When it travels that short distance it opens the car up completely. Any tips, tricks and advice greatly appreciated.

If the engine runs screwy so will trans so scan for codes and check fuel pressure first. Auto parts rent gauge

I don't have a place to test fuel pressure. But the previous owner removed the catalytic converter. Could that cause the engine to run rich?

Where do I test the fuel pressure at since it doesn't have the pressure gauge hookup?

You will either have to have a local pro do it or see if there are any adapters to go to line to hook up gauge. Some cars have the Schrader valve on fuel rail others don't
