Hi,
Tim, I think it was a good idea to replace the lower one as well. However, the stalling is likely something other. That shouldn't happen due to low coolant. When the engine cools, check to make sure the system is full. Never open the cooling system when the engine is hot.
Once it is cool, open the radiator cap. Next, on the top of the thermostat housing is a bleeder for the cooling system. See pics below. Remove that and slowly add coolant to the radiator until coolant begins coming from the bleeder. At that point, close the bleeder and top off if needed. See directions below.
