The fluid does not evaporate so there must be a leak. So, we will need to raise the car and use a flashlight to inspect the system.

Don't do this if you feel uncomfortable or have never done this before. I can tell you usual mystery leaks will be the steering rack seal or the power steering pump front seals or the high side pressure hose which I have marked in the images below. Check out the images (below). Please upload pictures or videos in your response to the problem so we can see what's going on. I have included how to change the steering rack out in case you need it.
