1991 Pontiac Sunbird Temperature gauge malfunction

1991 Pontiac Sunbird 4 cyl Front Wheel Drive Automatic

I have a 91 sunbird with a 91 cavalier motor in it. I have had a new head put on it and now the temperature gauge is bouncing between cold and extremely hot like a ball bouncing up and down. I have an appointment to take it in to have it looked at on friday but I am worried about driving it in the mean time. The check engine light has come on but then went out again within minutes.....will me driving my car until i get it looked at hurt it. What might the problem be with the gauge?
