2003 Pontiac Grand Prix cooling fan temp on my car

Just wondering what temp my car has to be before my cooling fans kick on? My gage gets to about 210 degrees and no fans. They have been tested ( there are two) They both kick on with a jumper wire is used. Someone told me that on my car they won't kick on til 213 degrees. Is that true? Can I get temp up some how? Thanks

the cooling fans will kick on low speed at 223F and will kick on high speed at 230F
