Engine Cooling problem
2000 Pontiac Firebird Automatic

I was driving and hit a dip kinda hard in the street going about 25mph, right after that the temperature went up just a little more than it normally would but went right back down. I continued driving everything seemed fine about 2-2.5 hrs later it shot up in temperature 260 I then pulled over so it could cool down for 45 minutes it went down to its normal right before 210. Then as I started driving again it started to rise again just to the other side of 210 and then to the next line then right back down. What does this mean that I messed up my car or my coolant is too low? Thank you.
