1989 Pontiac Firebird 1989 Firebird Formula Stalling

My 1989 Firebird Formula 305 TBI starts acting up when the temp gets around 180-200. I removed the thermostat just to find that it was stuck closed. The temp still gets higher when doing stop and go driving and every once and a while starts lagging. The RPMs fluctuate between 1200 and 500 RPMs and the acceleration is sluggish. When the key is turned to the ON position I can hear the fuel pump engage. Any Ideas what this could be? Also what is the easiest way to replace the spark plugs/wires/distributor cap? Also the car doesn't seem to recognize that it is is park, I can move the shift lever back and forth without pressing the brake or the shift button, this leads to me not being able to take the key out of the ignition. Any ideas?

Check your shift linkage to see if it is out of adjusment and not allowing your steering wheel lock to not turn enough. If you have a running hot problem when it gets hot/warm, shut foff the car, disconnect the electric fan then feel the radiator in different areas. If you feel cold anywhere then you'll need another radiator as it should be the same temp all over. When changing the dist cap or wires do them one at a time so youdon't get them screwed up. And change the spark plugs normally. You can go to the tune up site here and they go through step by step.
