Can a MAF cause the engine to over rev? My aztek is over revving when I'm driving, while I'm stopped at a stop sign. If I put it into neutral or park the RPM gauge will go up to 3000 RPM's. It feels like I'm driving with one foot on the gas and the other on the brake. I recently had the transmission flushed with fluids and filter being changed.

It could, but unlikely. It sounds more like a throtte position sensor or idle air control valve. Has the check engine light come on?
