Would low oil cause the engine to shut down? The motor still turns over, but there is no spark. The dipstick reads very low oil. What can casue the shut down and how do I fix it?

Low oil will not cause a no start or a shut off
don’t run engine low on oil or will be damaged

crank sensor would
check? Replace crank sensor
check ASD relay

The van leaks oil like crazy. Added oil, tried turning it over obviously still no spark, but the oil poors out the bottom near or around the oil filter.

Ideas on that?

You need to have that van started 1st.
But you may check oil pressure switch for oil leaks

You need to check for spark and fuel pressure
when key is on do you hear the fuel pump running?
Check timing belt depend on your engine size if you have one
fuel pump more likely to be the cause

engine size?
