After professional replacement of cylinder head there is a pinging/spark Knock under acceleration. What is the proper procedure to set basic engine timing on 2.5 w/ air?

Same as any other engine with a distributor.

I'd take it back where the previous work was done and explain what it's doing. If the machine shop resurfaced the head, as most do, the compression ratio would go up slightly. Cam timing will become slightly retarded at the same time, but ignition timing will not change. Retarding ignition timing slightly may solve the pinging problem.
