1991 Plymouth Acclaim Temperature

Hi. I have a Plymouth Acclaim, 91', and my temperature gauge is fluxuating. The temperature sending unit and the thermostat have been changed but the temperature is not staying constistant. While driving the temperature will rise almost to the high area then drop back down. Any info would be helpful. Thank you

Have you verified that the temperatures are accurate and it's not a gauge issue?
