Why would the number eight plug shoot out?

Depends on which engine it is. The common reason is thread failure in the head or the plug itself coming apart.
Some engines are very prone to this issue, Fords "modular" engines are among them.
Being a 1996 your truck should not have that engine but it depends on actual build date.
