If the fan clutch is new and working, the cooling system is clean and not corroded, it sounds like the old T-stat was bad. I know you removed it and it is worse. That is because the coolant is flowing too fast through the system without the resistance of a thermostat. The result is exactly what you described. It takes longer to warm up and then runs hotter when sitting.

If everything is clean, full, not corroded, the fan clutch is working, that is my first guess.
