My vehicle will start to overheat after driving for a long time?

My vehicle will start to overheat after driving for a long time. I was stuck in traffic on the freeway for about an hour and it’s about 110 degrees in Las Vegas. My temperature rose to 205 then went back down to 200 degrees, the car will only do this on hot days, it repeated did this several times while I was on the freeway. When I got home and shut the car off the fans still stayed on. The car has never done that before. Within the last couple of months, I replaced the radiator, hoses, thermostat, cooling fans and water pump. My fans come on as they should. Coolant levels are fine as well.

This is a sign of a blown head gasket.
