I know you probably feel confident with the thermostat, a miracle, a breakthrough.
I am a Jeep guy and eight or nine or so years ago I was sort of stranded in the recliner with a really bad broken foot learning how to use a computer via phone with my sister.
I was surfing (dog paddling) around on the net, in particular Jeep places (sites). I recall seeing that they can fail (I do not use them myself Ia m one of those "too good to be true" people).
I just did a Google search to see what all was being said about them.
This was the last search I made, "fail safe thermostat failure", plenty of reading.
So anyway if it did fail "open" (as advertised) I would guess it is sacrificial and now maintaining operating temperature and heat is not faring well.
You say it overheated again, now everything is just fine.
I would rule out a stopped up radiator.

I kind of want to stay in the middle, but if it happens again, I would maybe look into that thermostat as a possibility.
