1995 Opel Astra Temp. Gauge

Hello. My temp. gauge keep going up & down from start. Then it settles for a few seconds & then starts off again. I had a new thermostat and temp. sensor fitted a couple of months. Any ideas what wrong.

Other than the coolant temperature sensor check if it has an engine temperature sending gauge/switch.
