On cool days I often have to turn off the engine after warming it up in park as the throttle seems to stick open or running high like I have my foot on the accelerator. Sometimes it will click and drop down to normal idle but more often it sticks on high rpms till I turn it off and restart it.

I'll need a little more information to answer your question.

Is your "Check engine" light on? Are you saying that you actually hear an audible "Click"? How high is your idle?
Your actual throttle should not make any noise. If your A/C compressor is on, then that could be forcing your engine to rev higher than a normal Idle. And you would hear the compressor clutch cycling on/off.

You could also have a vacuum leak, but that wouldn't produce a clicking noise. Only a hiss.

If your check engine light is illuminated, then you should take it to AutoZone or any major parts store and ask them to hook your computer to their scanner. They'll give you definitions to the trouble codes. It's free.
