The AC is locked up and not turning causing the serpentine belt to shred. My question is can I buy a serpentine belt for this vehicle that will bypass the AC unit as we do not us it anyway or do I have to get the AC fixed?

You need to check to see if the car was available without AC. If it was, you should be able to bypass it. (the compressor may need removed) If it wasn't an option, you may rerout it and find that is slips on one of the pulleys because of the angle of the belt to pulley contact.

Check the belt routing diagrams on this page to see if there is an option for your car without AC.

Let me know what you find or if you have other questions.
