The car is currently running on E85 fuel, it's been sitting for over a year, save there's currently half a tank full. Gave her a full tune up (plugs, wires, distributor cap, oil) question is do I leave the old fuel and mix it with new fuel, or should I drain the tank and fill her with all new fuel?

It is best to drain the old fuel out before installing new fuel to be safe, here is a video on how to siphon the tank to help you with your car. Also, I would change out the fuel filter.
