If I remove the oil filter to get at the sensor how much oil will I lose?

Pretty much whatever you spill out of the filter.

Have you a new filter (I would never reuse a filter) and a quart of oil on standby for after you complete the task.

Install the filter, fire it up a minute or two (to fill the filter, regain oil pressure). Turn it off, let it sit a few minutes. Check the dipstick. Then add oil until it is back to the proper dipstick level.

Let us know how it all works out.
