We have unbolted the engine mount and transmission mount, but when we jack it using the bell housing, it still lifts the car? What else do we need to unbolt to get it to raise the engine out of the mounts?

You don't jack the engine up to get the pan out, you remove the crossmember and then drop the front differential carrier and the steering rack down. You can then take the pan off. Don't forget to remove the bolts that secure the transmission to the pan, or you will crack it.
You would need to notch the firewall to get enough room to lift the engine up and get the pan off that way.
