I had someone work done on my truck and they changed the gaskets out about two years ago. Now it smells like I am burning oil, ever since I changed the plug wires. Why is that and what can I do to fix this issue?

You need to find out where the oil is leaking from and where i is burning off. When the truck is hot open the hood and look for smoke to see where to look for leak.
