2000 Nissan Altima Beeding

When fushing old fluid out of system we are to open all bleeder screws press the brake pedal down close screws and let pedal back up and try again if needed ? And while we're doing this does the cap need to be on the master cylinder ? Or by not letting master cyl; run dry we can leave cap off in process.
