Hello, it sounds like some of the coolant that sprayed around the engine may have gotten into a bulk connector or down into some of the spark plug holes or into some of the ignition coil harness plugs, I know this vehicle has coil over plug design, but these codes, P0351 and P0356 are ignition coil circuit primary/secondary codes. So, I would inspect each coils harness plug and the spark plug hole for any possible coolant intrusion. As for the P0113 Intake Air Temperature (IAT) sensor circuit high Bank 1, this is another circuit code, the IAT is part of the Mass Air Flow sensor on this vehicle. I'm not sure how much of the engine was sprayed with hot coolant, it sounds like quite a bit. The PCM is located on the passenger side rear of the engine compartment, so I think going through and checking the wiring harness throughout the engine compartment as well as the PCM connectors is a good idea, The other codes I think are just because of the loss of coolant. P0128 Coolant Temperature Below thermostat regulating temperature, and P1299 is Cylinder Head over Temperature protection.
The coils that set codes are A and F, I will try to find some service info on those locations, I assume A is cylinder 1. But I'll check

This does have a coil per cylinder, correct? I'm not finding any E Series Van, but the F150 looks to be the same exact setup,
Also, what brand spark plugs did you recently install?
This is the OEM Ford Motorcraft spark plugs that should be installed. I highly recommend using the OEM on any Ford. Especially with the amount of cheap aftermarket parts that are out, going bad constantly. Sometimes right out of the box.
