The antifreeze is like a gel or pudding, what could be causing this to happen?

coolant has been mixed wrong or wrong coolant used. sounds like Dex Cool was either in radiator and then another type mixed with it or vise versa, will need to flush cooling system completely and use appropriate coolant.
