Just got quoted cost to replace rear brakes/calipers of $240 per side, plus labor. Total will be $600+. Is this reasonable?

seems a little pricey, but not bad. should be around $450 at the average rate of $70 / hour. depending on your location, that rate may be more or less which will change the estimate..
