Two days ago, my car showed the engine/radiator temperature constantly nudging into the "H" zone. I drove for over 40 miles like this. But then took it to a repair shop. He ran a diagnostic test and said that the 'water pump' was leaking. I declined to change it at that time and said I will be back in 2 days to replace it.

However, after I started driving back home from the shop, I noticed the thermostat was 'normal' and pinned at the mid-way level between "C" and "H" (which was really baffling!) I drove for over 10 miles on this trip.

My questions:
1. What would be the estimated cost for changing the water pump (including labor etc.). I was told $500 to $600.
2. What if I neglected the leaking water pump and just replaced the coolant/antifreeze at much more frequent intervals (to compensate for the leak.). I drive <8-10 miles a day.

Any pointers would be appreciated.

You could probably change the water pump yourself and save some money. Get a used one from a scrap yard and you will save that much more.
Keep running the car with the thought that if I don't look it will go away and that $500 to $600 charge will look like pocket change. Ask around to see how much it will cost to replace the engine.
This because, if the water is not flowing through your engine keeping it cool, in a worst case scenario you could melt the bearings onto the crank, warp the head and seize the engine.
So pick up a Haynes manual, have someone drive you to a scrap yard to pick up a water pump and change it in your driveway. It is the cheapest way to go, I wouldn’t even start the car until the pump is replaced.
