Is there any noise from the engine (ticking or knocking) when the light comes on? Also, have you checked the oil pressure sending unit for leaks?
The best way to check oil pressure is with a mechanical fuel gauge. Most parts stores will lend or rent one to you. All you do is remove the electric sending unit and screw in the mechanical one. That way there are no electrical components that can fail.
Now, other than checking oil level and condition, I suggest checking for leaks at the oil sender, making sure there is no corrosion on the plug connector, and then checking it with a mechanical gauge. If in fact you do hear engine noise, then suspect an internal issue.
However, if you find the sending unit is bad, here are the directions for replacing it. The attached pics correlate with the directions.

- J 35748 Oil Pressure Sending Unit Socket

1. Turn the ignition OFF.
2. Remove the electrical connector.
3. Remove the engine oil pressure sensor (1) using J 35748.
Installation Procedure

1. Coat the threads with sealer.
Notice: Refer to Fastener Notice in Service Precautions.
2. Install the engine oil pressure indicator sensor (1) using the J 35748.
Tighten the engine oil pressure indicator sensor to 12 Nm (106 inch lbs.).
3. Install the electrical connector.
