How can I tell what grade of Loctite to use on bolts like Flywheel bolts? Transmission bolts, and other bolts.

The service information will normally call out any types used and where. 99 percent of the time it will be nothing stronger than the medium strength blue 242 as the high strength red versions require heat to break them free. There are a few places to use the red but they are only in places where you are not commonly going to be removing them again as they require heat to break them free. For the flywheel the new replacement bolts will likely have anything needed on them from the factory.
