2001 Jeep Wrangler thermostat and oil pressure guage

i have a 01 jeep wrangler with 76000 miles and when i am stopped the oil pressure guage drops below 20 and my thermostat goes up to the red but when im driving they go back to normal. i keep replacing the coolant but i cant find any leaks. i checked my oil and i was very low so i changed the oil and it still is happening. Are these linked together or do i have two seperate problems

Did the oil look normal or like a chocolate malt?
Have you noticed any white smoke from tailpipe?
