Recently my fuel gauge would randomly drop to 0 despite there being a full tank of gas in the car. I've had the fuel sending unit replaced and a new fuel pump installed, now I have the exact opposite happening. I filled the car with gas, set the odometer to 0 and went about driving as normal. I noticed today that my odometer was reading 285 miles and my gas gauge was reading 3/4 of a tank of gas still left. I refueled the car and it took nearly a whole tank of gas. Does the gas gauge have to re-calibrated at all?

No the fuel guage does not have a calibration procedure. It sounds like you have a bad sending unit so I would have them warrenty it.
