1993 Jeep Cherokee temp sensor

i recently installed a new head gasket and new coolant lines as well as all the other gaskets on the top of the car. when i put it all back together everything worked like it was supposed to. i drove it for about ten miles and the temp sensor on the dash started going back and forth then just stayed below normal running temp i went out and got a new one and it still will not register the temp and just after installing that my speedometer went and now i cant tell how fast im going. i was told to go out and get a new speed sensor but what would cause all the sensors to go bad because it seems like evey time i get something new something else goes wrong and the previous problem doesnt get fixed

Check the temperature sensor for the guage itself. See below
