2002 Jaguar X-Type overheating

car runs at normal temp at normal driving, urban and freeway.

Get into traffic bumper to bumper and within about 15 minutes temp gauge far into red and all warning lights on red.Engine may even boil. Pick up speed ---back to normal as if nothing has happened, and engine is OK.

Any ideas please.

check the cooling fans are working correctly
