2001 Other Jaguar Models eratic temperature

Hi, My 2001 S type is misbehaving - engine temp gauge goes from normal to overheat whilst driving
and visibly fluctuates. If I stop and turn off engine it recovers to normal within a couple of minutes.
Engine fan also runs for a long time after turning off engine even when temperature shows normal.
What do you think? .. John

start by replacing the thermostat and flushing the cooling system !
