I just want to identify what the turn knob is/does.
It has an engine symbol on it, and around the outside starts with auto, then goes from slow to fast. It is below and to the right of the steering wheel. Right hand drive vehicle. Mitsubishi Canter

The description sounds like a manual throttle control. The auto position is the "normal" setting. It lets the foot pedal operate. Then when you turn the knob you can increase the engine speed without stepping on the pedal. This would be used to control the engine speed if you were using something like a crane or other PTO powered item or if the truck was being used in a way that you needed more power while stationary like it was a refuse truck or emergency vehicle.
