Temperature gauge in dash would go straight to hot, replaced temperature gauge sensor and still does the same, goes instantly to hot.

Hi,
If the engine is cold and that is happening, check the connector and wiring near the sensor for damage. The cold engine has a higher voltage signal than the hot engine. So, if it goes straight to hot, power is shorting at some point.
Because of the sensor's location, check where it could be rubbing against the transmission bellhousing. See pic below
