Hi hondadelsol1993mil,

Did you bleed the system after replacement of the parts?
Did you recheck the coolant level?
Are the cooling fans working?

A fluctuating temp gauge is usually an indication of insufficient coolant in system. Could be due to air trapped in system.

When engine is cold, remove the radiator cap and check the coolant level.
Check the recovery tank coolant level as well. Top up if necessary.
