When I sit idling for more than 3 minutes, my temperature gauge rises, but will drop down once the car is moving...
Whats possibly going on here, and can it be fixed relatively easily?

First, check the fluid level. Check the reservoir but don't count on that to reflect the true level of coolant. With the engine cool, open the radiator cap and top it off. Close it back up. Make sure there are no leaks. Bleed the system when engine is hot at a bleeder and get the air out of the system.

If the car continues to do this, replace the thermostat located near the engine head where the top radiator hose connects to the engine. This should be where the heater hose connects as well. Install a new thermostat and repeat the coolant level and bleeding process. See what happens.

Bruce is right but you need to check the coolant fans for proper operation. The have low and high speed relays also the may not be turning fast enough. Let me know Losone.

good advice except the thermostat is on the end of the lower hose. after that, chances are the radiator is starting to go bad. pretty common for a honda with some years.
