I’ll be driving and my temperature gage is normal then all of a sudden it’s kind of like sputters then temperature gauge max’s out and it shuts off. If I wait a little bit it will start?

It sounds like the engine coolant temperature sensor is shorting out. Here is the location so you can check out the wiring connector and the sensor replacement as well in the images below. Please let us know what happens.

And when I start my car, my cooling fans automatically come on and stay on. Could that temperature sensor be the reason is doing it and my air conditioner quit working?

Yep, it sure can, if the PCM sees the engine overheating it will turn off the A/C system.
